Why Egg Yolks Soaked in Oil or Containing Alcohol Cannot Be Baked in Rotary Ovens?

Egg yolks soaked in excessive oil or fillings with alcohol are forbidden to be baked inside rotary ovens, mainly due to high fire and explosion risks amplified by the structural characteristics of rotary ovens.Safety in production must be prioritized.

Alcohol is a highly flammable liquid. When heated during baking, it evaporates rapidly and forms flammable vapours inside the oven cavity. Once the concentration of alcohol vapour reaches the explosive limit and meets high-temperature heat sources, flash fire or deflagration may occur.

For heavily oil-soaked egg yolks, large amounts of grease will seep out continuously as temperature rises. Unlike static deck ovens, rotary ovens adopt hot air circulation together with constant tray rotation. The rotating movement makes leaked oil splash and spread widely. Splashing hot grease can easily touch heating tubes, burners or hot furnace bottoms and trigger open flames.Safety in production must be prioritized.

Furthermore, rotary ovens feature an enclosed hot air circulation system. The circulating hot air accelerates the diffusion of alcohol vapour and oil mist throughout the whole chamber. Once ignited, flames spread quickly along with airflow. Oil drips tend to accumulate in dead zones at the bottom of the oven and form greasy deposits over time. These oil residues will sustain combustion and make fire fighting much harder.

Additional hazards include dense smoke generated by burning grease, which contaminates finished mooncakes and leads to product waste. Open flames can also damage thermal insulation, fans and sealing components inside the oven, shortening the service life of equipment. Worse still, for diesel or gas-fired rotary ovens, severe fires may ignite fuel pipelines and cause serious safety accidents.

In summary, the rotating trays and enclosed circulating hot air of rotary ovens increase fire risks significantly. Flammable vapours and splashing grease greatly raise the possibility of fire or explosion. Therefore, products with alcohol or heavily oil-soaked egg yolks must not be loaded into rotary ovens.Safety in production must be prioritized.
